Tricky Ingredients Guide

Hydroxypropyl Methylcellulose—sounds quite scary but it’s not. Hypromellose is modified cellulose (not genetically modified!). Cellulose comes from plants and is commonly used as a dietary fibre. It is recognised as safe by the FDA and widely used in food industry. At Just: Gluten Free Bakery we use it to give our products the texture of real bread and to help them freeze.
